Cold Strawberry Syrup

A bright, no-cook strawberry syrup made by macerating fresh berries with sugar. Use it in lemonade, cream soda, cocktails, mocktails, and sparkling drinks.

Ingredients
  

  • 1 pound fresh strawberries hulled and sliced
  • 1 cup granulated sugar
  • 1 pinch fine salt
  • 1-2 tablespoons fresh lemon or lime juice to taste

Instructions
 

  • Hull and slice the strawberries. Place them in a medium bowl.
  • Add the sugar and salt, then toss until the berries are evenly coated.
  • Cover and refrigerate for 8 to 24 hours, stirring once or twice if convenient.
  • Strain through a fine-mesh strainer. Let it drain without pressing for the clearest syrup, or press gently for maximum yield.
  • Stir in 1 tablespoon citrus juice. Taste and add the second tablespoon if needed. Transfer to a clean bottle and refrigerate.

Notes

Storage: Refrigerate in a clean, airtight container and use within 7 to 10 days. Freeze small portions for up to 3 months.
Serving: Start with 1 to 2 ounces per drink, then balance with citrus, bubbles, cream, or spirits.
