Fresh Mint Simple Syrup

Ingredients
  

  • 1 cup granulated sugar 200 g
  • 1 cup water 240 ml, plus more for blanching
  • 1 cup lightly packed fresh mint leaves and tender stems about 27 g

Instructions
 

  • Rinse the mint and remove damaged leaves and thick, woody stems.
  • Combine the sugar and water in a small saucepan. Warm over medium heat, stirring occasionally, until the sugar dissolves completely, about 2 to 3 minutes. Do not reduce or continue boiling.
  • Remove the saucepan from the heat. Add the fresh mint, gently press it beneath the surface, and cover the pan.
  • Steep for 20 to 30 minutes. Begin tasting after 20 minutes and strain once the mint flavor is clear and fresh.
  • Pour the syrup through a fine-mesh strainer into a clean jar without pressing the leaves aggressively. Cool completely, cover, label, and refrigerate.

Notes

Chef tip: Use plenty of fresh mint because the flavor needs to remain noticeable after the syrup is diluted with ice, tea, citrus, or sparkling water.
Mint choice: Spearmint is the best all-purpose choice for mojitos, lemonade, and iced tea. Peppermint is stronger, so begin tasting it earlier.
Do not boil the mint: Dissolve the sugar first, remove the saucepan from the heat, and then add the mint.
Storage: Refrigerate in a clean, airtight container and use within 7 to 10 days for the freshest flavor. Discard the syrup if you see mold, smell fermentation, or notice unexpected bubbles or pressure.
Freezing: Freeze small portions for up to 3 months and thaw them in the refrigerator.
Serving: Start with 1 to 2 tablespoons per 8-ounce glass of lemonade or iced tea, or approximately ¾ ounce per mojito.
