A fresh, versatile mint simple syrup made with a gentle, covered off-heat steep. Use it in mojitos, lemonade, iced tea, mocktails, sparkling drinks, and party pitchers.

Instructions
Rinse the mint and remove damaged leaves and thick, woody stems.
Combine the sugar and water in a small saucepan. Warm over medium heat, stirring occasionally, until the sugar dissolves completely, about 2 to 3 minutes. Do not reduce or continue boiling.
Remove the saucepan from the heat. Add the fresh mint, gently press it beneath the surface, and cover the pan.
Steep for 20 to 30 minutes. Begin tasting after 20 minutes and strain once the mint flavor is clear and fresh.
Pour the syrup through a fine-mesh strainer into a clean jar without pressing the leaves aggressively. Cool completely, cover, label, and refrigerate.
