Ingredients

  • 1 cup granulated sugar
  • 1 cup water
  • 1 vanilla bean split and scraped, or use 2 teaspoons vanilla bean paste
  • 1 teaspoon vanilla extract optional
  • 1 pinch fine salt

Instructions

  • Combine the sugar, water, vanilla bean and seeds or vanilla paste, and salt in a small saucepan.
  • Warm over medium-low heat, stirring occasionally, until the sugar dissolves completely.
  • Let the syrup barely simmer for 2 to 3 minutes, then remove it from the heat.
  • Steep for 10 to 20 minutes. Leave the vanilla bean in while the syrup cools for more flavor.
  • Stir in vanilla extract, if using, once the syrup has cooled slightly. Strain if desired, transfer to a clean bottle, and refrigerate.
