Ingredients
  

  • ¼ cup extra virgin olive oil
  • 2 tablespoon fresh lemon juice about ½ a lemon
  • 1 tablespoon honey or maple syrup for a vegan option
  • 1 tablespoon Dijon mustard
  • 1 clove garlic finely grated or minced
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional, for a slight kick
  • 1 teaspoon white miso paste optional, adds umami depth and richness
  • ½ teaspoon finely grated lemon zest enhances citrus aroma and freshness
  • ½ teaspoon sumac or smoked paprika optional, adds subtle tanginess or smokiness

Instructions
 

Combine Ingredients:

  • In a small bowl or jar, whisk together lemon juice, honey, Dijon mustard, garlic, miso paste, lemon zest, salt, black pepper, sumac or smoked paprika, and red pepper flakes.

Emulsify:

  • Blend everything with an immersion blender or wisk for a silky texture. Alternatively, slowly drizzle in the olive oil while whisking continuously until smooth.

Taste & Adjust:

  • Add more honey for sweetness, lemon juice for acidity, or olive oil for a milder taste.

Notes

Store in a sealed container in the fridge for up to 1 week. Shake or whisk before using.
Delicious over salads, roasted vegetables, grilled fish, or even as a sauce for chicken and grain bowls.
Maple syrup keeps it vegan without sacrificing flavor.
